Instructions

Wash the rice in plenty of water, and then drain. On medium heat, heat a large pot, then turn in the vegetable oil and heat it for a minute. Add the sliced onions to the hot oil and stir; leave to fry for two minutes, then add the puree and leave to fry a bit for about three minutes.

Add the tomato paste, stir, and leave to fry with the onions and puree for three more minutes. Add water to the mix, enough to cook the rice till it is tender, and stir. Then add the seasonings (knorr cubes, nutmeg, curry, thyme, ginger, garlic, chicken seasoning), check for taste and add salt. Leave to boil.

When the mix is boiling, reduce the heat and turn in the washed rice to cook till the end on low heat. Avoid turning the rice throughout the cooking process till you are sure it's almost done cooking and the water used in cooking it is almost dried up.

When you have confirmed that the rice is very close to being done, and the water is almost all dried up, stir it from top to bottom. Do this till you are sure it is of uniform colour, then leave for five to 10 minutes to dry properly ON VERY LOW HEAT. Serve hot.

Leave the bleached oil to settle, and the fumes to clear for about five to 10 minutes before opening the pot. Open the pot, remove the burnt onions, turn on the heat and regulate to medium, then replace the burnt onions with fresh onions and the locust beans. Fry until the onions are translucent, then add the puree and stir.

Cook for 10 minutes, then add the diced beef and pomo, smoked fish and boiled eggs. Add the knorr cubes, seasonings, and crushed ginger and garlic. Cook for 20 minutes, add salt and stir regularly. serve hot with ofada rice.
