Soak the fish in cold water for 24 hours. The water should be changed several times. Once the product is rehydrated and de-salted you can cook it as preferred.
Store in a cool and dry place. After soaking, chill and cook within 48 hours. Warm conditions shorten the life of the product. Refrigerate to maintain product quality in warm conditions.
Even though it is adviced that all the bones have to be removed, some of it can be left.
