The chicken gizzard is a delicacy that is popular in many parts of the world. It is usually served with a sauce or as part of a soup dish. It can be prepared in various ways.

Recipe for gizzard


  • 1 kg gizzards, washed and cleaned
  • One scotch bonnet
  • One can of chopped tomatoes
  • One red bell pepper, chopped
  • 1½ onion, sliced
  • One green bell pepper, chopped
  • One yellow bell pepper, chopped
  • One chicken stock cube
  • 1-2 teaspoon thyme
  • Water
  • A splash of vegetable oil
  • Add salt to taste



First, wash and clean your gizzards. Then add to a large pot of boiling water with chicken stock, salt, and thyme, and stir. Cook for 25-30 minutes or until soft.


Heat oil in a pan and fry gizzards for 5-7 minutes on each side or until browned.


Then, place chopped tomatoes, scotch bonnet pepper and onions into a blender and blend until smooth.


Cover the bottom of a pan with vegetable oil. Pour in the tomato sauce, season with salt and chicken seasoning, add thyme, stir, and bring to a boil. Then leave it on low/medium heat for 10-15 minutes.


Finally, add the fried gizzards to the sauce. Add fresh onions and bell peppers, then stir. Simmer on low heat for 3-5 minutes.
