Tilapia is a freshwater fish that mainly inhabits shallow streams, ponds, rivers and lakes, and rarely in brackish waters. Historically, they have been very important in Africa's micro-fisheries and are becoming more and more important in aquaculture and aquaponics.

Tilapia fish can be processed into skinless, boneless fillets, with yields ranging from 30% to 37%, depending on the size of the fillet and the final trimming. Yields of up to 47% of harvest weight have been reported for some commercial strains.
