Banku is one of the most popular national dishes of Ghana, which originates from the Ga-Adangme people, around the south-eastern coast of Ghana. It is distinguished by its aromatic flavour, which is obtained by fermenting corn for several days to form corn dough.

Banku is usually eaten with okro stew, however, like kenkey, it is also popular with grilled fish, fresh shito like salsa and shitor din, which is black pepper sauce. Today, most banks are made from a combination of corn dough and cassava dough.
