Semolina is a coarse, clean flour of durum wheat (inter-milling stage), mainly used to make couscous, pasta and sweet pudding. The term semolina is also used to refer to coarse flour made from other types of wheat and sometimes other grains (such as rice and corn). Instead of corn meal, semolina flour can be used to sprinkle flour on the baking surface to prevent sticking. When baking bread, mix a small amount of durum wheat semolina with a regular flour mixture to create a delicious rind.
