  • 1 rib celery, chopped

  • 1 bay leaf
  • 3 potatoes, peeled and cut into 1-inch chunks, or more as desired
  • 2 ½ cups vegetable broth

Instructions

STEP 1

In a bowl, mix the goat meat, curry powder, chilli pepper, garlic, salt and pepper. Cover and put it in the refrigerator to allow the flavours to blend. After 1 hour or overnight is up, it's ready.

STEP 2

Pat the goat meat dry and set it aside, reserving marinade. In a stockpot heat vegetable oil over medium-high heat. Cook the meat in batches, browning on all sides, 5 to 6 minutes per batch. Transfer it to a plate and set aside. Add onion and celery to the stockpot; cook and stir until onion begins to brown, 4 to 6 minutes.

STEP 3

Stir the browned goat meat into the onion mixture. Add the reserved marinade and vegetable broth, along with a bay leaf. Bring it to a boil, cover, reduce heat to low, and simmer for 1 hour. Stir in the potatoes and continue simmering until both are tender, about 35 to 45 minutes more.

STEP 4

Take the stockpot from the heat, skim off the surface fat, as well as discard the bay leaf.
