Dry bay leaves are used in cooking for their flavour and fragrance; they are not eaten. They have a floral and herbal scent reminiscent of oregano and thyme. They are rich in vitamins, potassium, calcium and magnesium. They can be added to slow-cooked foods recipes such as soups, stews, and sauces and are removed before serving the dish.

Preparation and Usage
Simply add desired amount to the recipe and take out once the dish is finished cooking. Add at the beginning of cooking as the longer they simmer, the more time they have to release flavour and allow it to infuse into the dish.
