Corn dough, also known as masa (or masa de maíz), is a maize dough that comes from ground nixtamalized corn. The corn dough is the result of grinding entire corn kernels into a fine powder. The resulting powder is dried and then called masa harina. It contains protein, fibre, starch, and the vitamins and minerals found in whole corn. It's typically yellow in colour. It is used for making corn tortillas, gorditas, tamales, pupusas, and many other Latin American dishes.
