General Information

White sweet potato, scientifically called Ipomoea batatas, is a dicotyledonous plant belonging to the family Convolvulaceae. It is large, starchy, and sweet-tasting. 

They come from the tropics of the United States. White sweet potatoes have lighter  golden skin and white flesh. The inside of the white sweet potato looks  like a starchy russet, but its shape and texture are similar to those of the usual sweet potato. White sweet potatoes are a low-calorie, high-fibre alternative to starchy potatoes and are a popular healthier alternative.

White sweet potatoes are a little crumbly and have a dry texture, with little sweetness. In appearance, white sweet potatoes can better reproduce the look of classic potatoes.

Like yams, white sweet potatoes can be used in many different ways. They can be boiled, fried, roasted, baked, made into flour, mashed or pounded into dough to eat with sauces and soups, used to make porridge, and so on.


White sweet potatoes can be stored at room temperature for up to 1 week. To keep the white sweet potatoes fresh for a longer time, store it in a cool and dark place such as a pantry or cupboard. White sweet potatoes can also be stored in the refrigerator for up to 2 weeks. Cooked white sweet potatoes can be stored in the refrigerator for up to 4 days.


When you want to prepare white sweet potatoes, one important part is the selection process. When we select white sweet potatoes for you, we look for tubers that are firm and free from blemishes. 

When you have gotten your potatoes, peel the skin off, cut them up into desired shapes and sizes—slices or cubes—and wash them.

Sweet potato casserole pancakes are one easy way to make use of white sweet potatoes. Simply grind the remaining sweet potato casserole you made previously and mix it from scratch with the pancake ingredients that you have in the kitchen cupboard, and when it is ready, top with toasted chopped pecan and a small drop of maple syrup. Here are some ingredients you would need:

2 big eggs

1½ cup of whole milk

¼ cup of butter melted, plus more to butter the griddle

1½ cups of leftover sweet potato casserole

1¾ cup of all-purpose flour

2 tablespoons of light brown sugar

1 tablespoon of baking powder

½ teaspoon of ground cinnamon

½ teaspoon of kosher salt

¾ cup of pecans

Pure maple syrup for drip serving


In a large bowl, beat the eggs with butter and milk. Add the sweet potato casserole and stir. In a separate bowl, mix the flour, brown sugar, baking powder, cinnamon and salt. Add from dry to damp and stir just for mixing. Preheat the oven to 200 degrees to keep the pancakes warm while baking the entire batch.  Heat one or two pans to medium-low heat and spread butter on each—before adding butter, make sure the pan is completely warm.

Using a  measuring cup in the quarter cup, scoop  about 4 batters into a pan—do this per pan. Cook until the edges start to dry and the bottom is browned. After two to three minutes, bake the other side until brown and place it on a baking sheet. Next, put the baking sheet in the oven and keep it warm for as long as you continue to bake. While the pancakes are being cooked, heat a small frying pan over medium-high heat and add the pecan nuts. Dry-fry for about five minutes until it is browned and turn it frequently. Chill and chop roughly. Sprinkle with maple syrup and decorate with the toasted pecan nuts to serve.
