Unlike other decapods, the tails of crabs are curled beneath their thorax or midsection, their carapace; a higher frame shield is commonly broad, and their first pair of legs is changed into chelae, or pincers.
Many crabs are eaten by humans. The maximum vital and precious to be eaten are the crabs of the British and European coasts (Cancer pagurus) and, in North America, the blue crab (Callinectes sapidus) of the Atlantic coast and the Dungeness crab (Cancer magister) of the Pacific coast.

Preparation and Usage
To cook, remove the crab from the freezer and plunge into a pan of boiling salted water.
Return to the boil and cook for 30 mins/kg.
Cool rapidly then dress.
Fresh crabs should be eaten immediately.
Alternatively, freeze cooked crabs and use within three months.
