Tripe's texture is similar to that of meat, and it has a similar taste to that of veal or beef. Tripe has a mild flavor that makes it easy to incorporate into your recipes without overpowering them. It can be prepared in a wide variety of ways, and is often used as an entree or side dish.

Preparation
Our beef tripe is already cleaned and cut into medium uniform pieces, but you can always cut it into smaller pieces if that is what you prefer. It can be boiled for 15-30 minutes to soften it, then simmered in a broth containing vegetables, seasoning and salt for 1-3 hours until tender. The stock can be saved for later use.

A common way to prepare tripe is by simmering it in a flavorful broth for several hours. The meat may also be fried or grilled before serving as an appetizer or main course dish.

Ingredients
  • Shaki/tripe
  • Beef
  • Chicken
  • Ponmo

Instructions

STEP 1

To begin, prepare the base of the stew by adding red bell pepper, scotch bonnets, onions and plum tomatoes to a blender and blend until smooth.

STEP 2

Heat vegetable oil in a pot, enough to cover the base of the pot. Once it is hot, pour in the blended tomatoes and bring it to a boil.

STEP 3

Now season the stew. Add chicken cubes, thyme, salt to taste, tomato puree and chicken stock. Stir thoroughly, then simmer for 10-15 minutes.

STEP 4

When the stew is nearly ready, add pre-cooked assorted meats, such as chicken, beef and tripe. Cook for another 7 to 10 minutes on low/medium heat.

STEP 5

After the stew has cooked, allow it to cool for a few minutes before serving it. This will give the flavors time to meld together.

Dietary Information

Frozen beef tripe is a food product made from cow stomach lining that has been cleaned, sliced and packaged in blocks.

When you buy frozen beef/ox tripe products in their frozen state, they need to be thawed before using them for cooking purposes. The best way to thaw frozen shaki is overnight in the refrigerator.

Selenium is an important nutrient for human health, and tripe is a good source of this mineral.

Studies have shown that selenium is a vital constituent of your body's signaling and defense systems, and that adequate dietary intake has been linked to a reduced risk of certain heart conditions, arthritis, and infertility.
