Croacker

Croaker is a member of the drum family, which includes spot, weakfish, red drum, black drum, and spotted sea trout. All drums use special muscles to vibrate their swim bladders, allowing them to produce loud drumming and rumbling sounds; the croaker is the loudest drum. Croaker is lean and full-bodied, with an almost sweet taste. The flesh is hard and resembles a black drum, and its skin is edible. Due to their small size, they are usually cooked whole. It is a bony fish with fine texture and moderately salty taste.
